- 1 envelope active yeast
- 1 cup warm water
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp salt
- 12 oz evaporated milk
- 7 cups flour
- 1/4 cup shortening
- oil type of choice for frying
- to taste powdered sugar

Instructions
- In a large bowl combine warm water and yeast. Let sit for 5-10 minutes.
- Beat eggs and add them to the bowl along with milk, sugar and salt.
- Add the shortening to the dough mixture and combine.
- Use an electric mixer or a whisk and slowly add the flour. The dough should be sticky, stop adding flour when the dough gets sticky.
- Transfer the dough into a larger greased bowl and cover with a towel. Allow the dough to chill in the refrigerator for 5 hours.
- Cover a large work surface with a thin layer of flour. Drop the dough onto the work surface and roll it until it is about ½ inch thick.
- Use a pizza cutter to cut the dough into 2 in. squares.
- In a fryer of your choice heat oil to 360°.
- Slightly stretch and drop each beignet into the oil. Cook 2 minutes on each site, or until the beignets are golden brown.
- Drain excess grease on a paper towel and cover immediately with a generous layer of powdered sugar.
